Protein Cinnamon Roll Muffins

Ingredients for muffins:

  • 1 cup pumpkin

  • 1/3 cup granulated sugar

  • 1/3 cup brown sugar packed

  • 1/2 avacado oil

  • 2 large eggs

  • 1 tspn vanilla extract

  • 1 1/2 cups gluten free flour

  • 1/2 cup vanilla protein powder

  • 1 tablespoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon salt.

Instructions:

Preheaet the oven to 350 degrees. Line muffin tins with paper liners.

In a large bowl, whisk together pumpkin, granulated and brown sugars, oil, eggs and vanilla until well blended. In another bowl, mix flour, protein powder, nutmeg, cinnamon and salt. Slowly add the dry ingredients to the pumpkin mixture until everything is combined well. Fill muffin tins evenly. Bake for 18-20 minutes. Let cool before serving.

Ingredients for Frosting:

  • 1 block of cream cheese
